Vegan Pumpkin Chocolate Chip Muffins

- 1 flax egg (1 tbsp flaxseed meal & 2.5 tbsp water)
- 3/4 cup pumpkin puree
- 1 cup almond milk
- 1 tbsp lemon juice
- 2 tbsp coconut oil
- 1 tsp vanilla
- 1/2 cup coconut sugar
- 3/4 cup whole wheat flour
- 1/4 cup almond flour
- 1/2 cup all purpose flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 3/4+ cup dark chocolate or carob chips
Steps:
- Mix the wet ingredients together.
- Mix the dry ingredients together.
- Combine wet and dry mixtures.
- Add chocolate chips.
- Bake for 20+ minutes at 375 F until done!
Recommendations:
- Feel free to use different types or different amounts of flours (e.g. whole wheat, almond, coconut, all purpose). Just make sure the total amount of flour is 1.5 cups.
